Key messages presented by Chef Rosenblum:

  • US highbush blueberries have a skin that allows juice to sweeten the whole muffin.
  • Smoothies can be made economically with frozen blueberries.

Panna cotta with blueberries inside and on top!

Ultimate blueberry muffins.  Chef encouraged audience to use a lot of blueberry to provide identity.  Too often bakers are timid as they do not want to have blue color in the batter.   Well -- this blue color is exactly what the consumer wants!  Great job chef!
